A Classic Reborn

Anne Dolamore was recently looking for a recipe for melanzane alla parmigiana. Rooting through her considerable book collection, she came across Arabella Boxer’s Mediterranean Cookbook, which in its day was a trailblazer but has long been out of print. ‘Arabella’s recipe was a novelty – she sandwiches mozzarella between slices of aubergine and then bathes them in tomato sauce. So simple and different and delicious. I sat down and went through the book on the spot, then contacted Arabella to ask if Grub Street could bring it out in a new hardback edition. She is thrilled.’
