Chef Ahmed Maaref is a British-Moroccan chef, author, and culinary storyteller working at the intersection of culture, identity, and modern gastronomy. With over 25 years of experience across fine dining and luxury hospitality, including Michelin-standard kitchens, he brings a dual perspective rooted in Moroccan heritage and refined through classical French and European techniques.
He is the author of Unveiling the Flavours, awarded Best African Food Culture Book in the World at the Gourmand World Cookbook Awards 2025. His work reframes Moroccan cuisine not just as tradition, but as a sophisticated culinary system with global relevance.
Ahmed is currently developing his second book, exploring how Moroccan and North African cuisines are interpreted, adapted, and often misunderstood within international gastronomy, offering a more critical and contemporary narrative.
