She launched her blog Rebel Recipes in 2015, which has held its own at the forefront of the plant-based sector for over 6 years and continues to do so.
Her online platforms now reach an army of food-based fans across the globe, and she now has 6 plant-based cookbooks—Rebel Recipes, Be More Vegan, My Vegan Year & Around the World Vegan Cookbook and Rainbow Bowls & The Vegan Air Fryer.

Niki started her career in food marketing and is a qualified holistic health coach. She is co-host of the podcast 'What the Focaccia' which focuses on food and sustainability with Bettina Campolucci Bordi.'
