I'm a cook, shaped by my upbringing on a farm in rural County Tyrone, Northern Ireland. I grew up in tune with the seasons, living frugally, eating seasonally, and wasting nothing. My recipes collect and collate the essence of these memories but add a contemporary twist.
I could only afford to do the Intermediate Course at Leith’s School of Food and Wine, and after spending years working as a private chef and gaining experience, I returned to Leith's as a junior teacher. A few years later I ran my own catering company and then moved out of London to Hampshire with my family. I started doing cookery demonstrations and cookery classes.
The Irish Bakery is my first cookbook.
