Thomas is a Beijing-based food historian. His day job includes teaching food studies at Beijing Normal University, but his real work is outside of the classroom. To truly understand the profound transformation taking place in China’s food systems, Thomas has driven cattle in Mongolia, grown organic vegetables in Beijing, and interned in restaurant kitchens across the country. A prolific scholarly writer, Thomas now aims to publish for a wider audience.
